Mom’s Applesauce Loaf

I recently won 4 boxes of random items at an estate auction. Floating loosely amongst the other miscellany was this small slip of receipt paper with a recipe for “Mom’s Applesauce Loaf” scribbled on it.  

Normally I’d have probably recycled something like this, but it just so happens my deep freeze is full of homemade applesauce.  Due to flooding rains in the midwest this summer, there was a bumper crop of apples and other tree fruits and people kept giving us bags full of fruit as each harvest came in (the apricots were ridicuous y’all – the trees were breaking with the weight of so much fruit). I went ahead and tried out Mom’s recipe and I must say, it’s a keeper!  I did have to replace the shortening with butter, but I doubt that substitution was a downgrade.

Instructions
  1. Cream together shortening, brown sugar and egg.
  2. Add applesauce, salt, cinnamon, cloves, baking soda and flour.
  3. Fold in raisins & walnuts.
  4. Pour into greased, floured loaf pan.
  5. Bake in preheated 350° oven for 50 - 60 minutes until toothpick comes out clean.
  6. Can store in refrigerator for 2 weeks or can be frozen.
